I want to be able to watch HD video (1080p) on my laptop. How well will a X3100 (or lower) handle the video?

The CPU will be able to handle it. The ATI HD 2x00 and Nvidia 8x00M series both help the CPU when playing HD video in some cases but a dual core CPU should have no problem playing it no matter what the card.
You will be able to watch HD content on the laptops LCD if it has a high enough resolution. If you want to play it on an external LCD you need a HDMI port.

as wave said, i'm not sure if your laptop has 1080p. you would probably only be able to stream, say from windows media center to an xbox to a 1080p tv. i'm not sure as to how this works, but i've seen it done.
